As I often do, I started with someone else's recipe and adjusted it to my liking (as follows).
Spicy Grilled Shrimp Marinade (good for about 2 lbs of protein)
Ingredients:
1/4 cup olive oil
1/4 cup sesame oil
1/4 cup fresh parsley, chopped
2 tbsp. hot sauce (I love Cholula brand)
2 cloves garlic, minced (or use microplane)
1 tbsp. ketchup
1 tsp. Sriracha (This is spicy! Skip it if you can't handle it; add more if you like it!)
1 tsp. salt
1 tsp. black pepper
4 tbsp. lemon juice (approx. 2 lemons juiced)
2 lbs. shrimp (medium or large), peeled and deveined
Wooden skewers, soaked in water for about 30 minutes
Directions:
- Combine all ingredients except for your shrimp in a shallow baking dish and mix well. Put shrimp (or other protein) into baking dish and toss in the marinade to evenly coat. Cover with plastic and refrigerate. I recommend marinading for no more than an hour — the acid in the marinade will start to cook the shrimp and make it tough.
- Soak the wooden skewers in water (to keep them from burning when you grill).
- Take marinating shrimp out of the fridge and skewer them up. So it's easy to turn the shrimp on the grill, be sure to stick the skewer through each shrimp twice. Be sure the shrimp aren't crammed together, and leave some room on the ends of the skewers.
- Put shrimp on grill (medium heat) and cook about 2 minutes each side until opaque.
